The fresh beef is blanched with hot broth poured right over it — tender, never overcooked, and the crispy cuts are absolutely delicious. The braised beef and various offal are all great too. The broth is a clear-style soup, light and naturally sweet.

The shop is open 8 AM to about 1 PM, but if they sell out early you're out of luck. To be safe, go early — before noon is best. Closed on Sundays.
