We tried the chocolate omakase from PLEARN, a famous shop in Rayong Province, run by the first-ever Thai champion in chocolate brewing and a silver medalist from Italy. The owner demonstrated it themselves, serving 3 glasses in total.
The first glass was cocoa water extracted from fresh fruit over 4 hours, tasting like mangosteen mixed with rambutan — genuinely delicious, sweet and tart. The second was a tea extracted from cocoa bean husks mixed with honey, with soft cocoa and honey lining the rim of the glass. The final glass was hot cocoa from a Rayong cocoa variety, with a subtle banana note, richly sweet since it's brewed with fresh milk.
