The Mud, Baan Din Samui, is a lovely eco-friendly cafe, restaurant, and hotel all in one, designed around Thai living with architecture built from natural materials. You don't need to be a hotel guest to stop by for a meal — the food is delicious, the atmosphere is great, and the decor is stylish and unlike anywhere else.
The hotel section sits right on the beach, so you can just walk out to watch the sunset. It's located near Na Thon Pier (the Samui pier for ferries coming from Surat Thani), though it's a bit of a haul if you're coming from the airport.
