Today we're taking you into the MAGURO OMAKASE experience at KISARA restaurant, Conrad Bangkok — genuinely excellent. It opens with a 3-bite amuse bouche of akami, chutoro, and otoro, a preview signaling that these three tuna cuts are what will carry the whole meal. Next comes Chawanmushi Maguro, a soft, mellow steamed egg served with confit tuna belly, followed by Nigiri Akami, a classic red-meat sushi, sweet and mellow.

The highlights are Nigiri Chutoro Uni, blended with creamy sea urchin roe; Negi Toro, minced otoro mixed with Japanese scallion that melts in the mouth; and Maguro Aburi, the signature dish of otoro torched to just the right fragrance, served over soy-butter rice. We finished with Maguro Salt Stone Sear, seared on Himalayan pink salt, and Smoked Tuna made with honey from the hotel's own garden — complex and well-rounded in flavor.
