Incredibly delicious ramen in 3 dishes, 3 temperatures, from Chef Shin, of the famously hard-to-book No Name restaurant, now opening THE SHOYU STAND to make it easier to get a seat. Split into cold, warm, and hot.

Jidori Shoyu Noodles 'Kuro,' 250 baht (add toppings for 300 baht) — a shoyu-and-chicken soup with flat noodles, topped with Dashi-Tama, a soft-boiled egg marinated in dried-fish and bamboo-shoot broth, tender and delicious.

Hiyashi Niboshi Soba 'Shiro,' 270 baht (add toppings for 320 baht) — a cold ramen with an Ichiban dashi broth of dried fish and seaweed, incredibly refreshing, with ice cubes made from the same broth to keep it cold.

Cappuccino Noodles 'AWA,' 280 baht (add toppings for 350 baht) — a cappuccino-like foamy broth, rich with chicken soup and Tori paitan dashi simmered a long time until concentrated.

There's also a special Maze Soba, dry ramen tossed in tare sauce with no broth. Call 096-912-7796, open 11 AM-3 PM. We'd recommend going as a pair since there aren't many tables.
